Something I might add is that agriculturally, potatoes are something of a miracle food, as they can be grown most anywhere and provide a high ratio of calories per water/energy/acrage needed (It leads at 18 million calories per acre, corn next at 12.3, wheat at 6.4). But I suppose putting them in the deep-fat fryer (plus adding salt and/or catsup) doesn't add to the base nutritional value? I love them baked with butter and salt (the only food I do salt).
