Thanks for pointing out the critical differences between processed and unprocessed meat, larger and smaller quantities, and charbroiled vs non. Personally, I eat unprocessed red meat about once a week as it provides needed protein and nutrients (mostly veggies, fruit, nuts, and some poultry otherwise). Saturated fats have received a better reputation lately, as the arterial plaques you describe are thought to be more inflammation related. As my dairy Vet father correctly once said 50 yrs ago "our dairy families ate tons of dairy, eggs, and meat and all lived into their 90s" (corollary, they ate LOTS of fresh fruits and veggies too). I also think any diet needs to be looked at through the lens of exercise and other lifestyle habits.
