Two axiomatic things about food come to mind here:

1) Generally speaking, it is the preservatives in food that are worse than the food itself (ie salts, sugars, nitrates, smoking, etc), but until recently, the alternative to this preservation was starvation. As such, we may ask things like "is it the meat that's bad or the meat preservatives?"

2) The viability of what you eat generally needs to be measured in the context of your age and activity level (ie if you are young and active you can perhaps handle more calories and carbs).
